The Birth of a New Classic
Crafted from the very grape skins that create our renowned Fusion V wine, the Fusion V Grappa—elegantly termed Husk Spirit—embodies the essence of our Bordeaux-style blend. With only a limited number of bottles produced, each individually numbered, this spirit is a collector’s treasure.
Masterful Craftsmanship
Our production team partnered with Wilderer Distilleries, one of South Africa’s most awarded distilleries, to create this unique product. The process involved distilling the Fusion V’s five cultivars into five cultivar-specific spirits from Cabernet Sauvignon, Malbec, Merlot, Cabernet Franc, and Petit Verdot grape skins, meticulously blending them (expand?), and then maturing the blend in a single French Oak barrel.
The Essence of Pomace
This unique spirit is distilled from our fermented grape pomace, the leftover skins and seeds from winemaking. Despite its humble origins as leftovers from wine production, grape pomace is rich in aromatic compounds that contribute to the distinct flavour of grappa. In addition to pomace, lees (sediment from fermentation) can be used in distillation, adding complexity to the grappa. The use of a column still continuously extracts and concentrates alcohol from pomace using steam to create a liquid solution called “flemma,” which is then distilled in columns to purify and concentrate the spirit.
Grappa develops smooth complexity from barrel ageing, retaining some original fruitiness also found in our wine, while gaining new aromas from the wood. One of our own De Toren Fusion V barrels was used to age our Grappa with the goal of producing a spirit that captures the essence of the grape and our iconic Fusion V, with distinct aromas and flavours.
