Serves 4 | Serve with De Toren Fusion V 2020

For the venison:

2 Tbsp thyme

2 Tbsp coriander, ground

2 Tbsp cumin, ground

½ tsp cayenne pepper

1 Tbsp salt

1 Tbsp treacle sugar

2 Tbsp olive oil

1 kg venison fillet

For the pickled carrot:

2 carrots, peeled

½ cup white wine vinegar

1 bay leaf

Few black peppercorns

 2 Tbsp white sugar

                For the hazelnut dressing:

1 spring onion, finely chopped

1 Tbsp fresh ginger, grated

2 garlic cloves, chopped

1 Tbsp Dijon mustard

½ cup red wine vinegar

1 ½ cup sunflower oil

1 tsp honey

½ cup hazelnuts, roasted & chopped

Wild rocket, to serve

Dried olives, to serve

  1. For the venison, combine all the ingredients. Rub the venison fillet until properly covered.
  2. Place a griddle or frying pan over high heat, once smoking hot, sear the venison on all sides until just browned & slightly charred.
  3. Leave to rest for a few minutes before slicing very thinly.
  4. For the pickled carrots, use a vegetable peeler to make long carrot slithers. Combine vinegar, sugar, bay leaf, peppercorns & sugar in a small pot. Bring to a boil then remove from heat & add carrots. Leave to cool.
  5. For the dressing, place everything in a blender & blitz until emulsified. Season with salt & pepper.
  6. Assemble your dish by laying sliced of venison on a plate, top with pickled carrots, wild rocket & dried olives. Lastly, drizzle with hazelnut dressing.
