An innovative reimagining of red wine, the French-inspired De Toren Délicate is an exquisite and light cépage that reveals its best assets when served slightly chilled. Not only does it offer the refreshment of a white wine and the elegance of a red wine, but it is also a very versatile food pairing wine due to its light-style nature.
And speaking of perfect pairings, this season, the best catch and the best match by far is De Toren Délicate served with freshly caught local Yellowtail – a delightful pairing indeed. The lightness of the wine is in harmony with the delicate fish.
Medium-bodied and immeasurably gentle, it offers up an abundance of juicy fruit and velvety, smooth tannins that lead to a sophisticated finish. While it displays intense red undertones, this limited-production wine is soft and delicate on the palate, making it the perfect culinary consort, not to mention the reason a number of the world’s top dining establishments choose it specifically for their dedicated tasting menus.
Here is our recipe for De Toren Délicate paired with Asian-style Marinated Yellowtail:
Serves 4
Preparation time: 15 minutes
Cooking time: 0 minutes
Ingredients:
2T Fish sauce
3T Soy sauce
2T Rice wine vinegar
2T Sesame oil
Salt & pepper to taste
½ Yellowtail fillet, sliced
Method:
Combine all the ingredients and marinate the Yellowtail for 2 minutes before serving. Serve with fresh greens like shaved fennel, broccoli, radish, shaved carrots or samphire.
We recommend decanting our De Toren Délicate at least one hour before enjoyment and serving it slightly chilled (11 – 13 degrees Celsius) with the Yellowtail dish, to allow the release of all the intended aromas and flavours.
Talk about indulging in the good things in life!
